Passover is a celebration of God's deliverance of Israel from bondage in Egypt. It is also a celebration of the sacrifice of the Lamb of God. It seems that each year at this time the topic of 'traditional vs. Biblical' always seems to come to mind. This article examines the Biblical feast of Passover in its relation to the tradition of Easter.

Joseph went into bondage; at the hands of his brothers.
God sent him ahead; to prepare for the others.
In the eyes of the pharaoh; God raised Joseph up.
The Israelites they prospered; God blessed them well.

Soon a new pharaoh rose up; Joseph he did not know.
Enslaved God's people; into bondage they'd go.
Four hundred thirty years later; to the very day,
God freed His people; and led them away.

By His mighty hand; God brought forth His judgments,

:: CONNIE'S KITCHEN – PASSOVER FAVORITES

-- Baker's® One Bowl Macaroons
Prep Time: 10 min, Total Time: 1 hr 24 min
Makes: 2 dozen or 12 servings, 2 cookies each

2-2/3 cups Baker's Angel Flake Coconut
2/3 cup sweetened condensed milk
1 tsp. vanilla

Heat oven to 350°F.
Mix coconut, milk and vanilla in large bowl. Drop by heaping teaspoonfuls about 1-inch apart onto well-greased baking sheets. Press down ends of coconut with back of spoon.
Bake 10 to 12 minutes or until golden brown. Immediately remove from baking sheets. Cool completely on wire racks.


-- American Haroset
Serve this sweet fruit mixture on the Seder plate for Passover and as a side dish. Also makes a great topper for ice cream or matzos.

1 large apple coarsely chopped
1/2 cup chopped pecans
1/2 teaspoon cinnamon
1 tablespoon honey
2 tablespoons of Passover wine

Mix all ingredients together and chill. Note: The European version uses walnuts in place of pecans.


-- Easy Passover Chocolate Cake

1/2 cup butter (or parave margarine)
2 eggs
2 sq. baking chocolate
1+ tsp. vanilla
2/3 cup matzo cake meal
3/4 cup sugar

Mix melted butter (margarine) and chocolate, pour over sugar and mix. While this cools, beat by hand the two eggs well.
Add eggs to the cooled mixture and beat. Add the vanilla and cake meal and beat. Spread into an ungreased 8" x 8" pan and bake at 375°F. for about 25 minutes.

This recipe takes very little time to prepare (all beating is by hand) and is quite good.


-- Connie's Easy Matzo Ball Soup

This is a great way to have a homemade matzo ball soup in less than half the time it takes to make it from scratch. Be careful when buying the chicken broth in cans or cartons. Some brands contain yeast (which is not kosher for Passover). I found that College Inn brand does not contain yeast.

2 cartons (32 oz) chicken broth
1 roasted chicken (store bought, removed from the bone)
1 tsp oil
2 cubes chicken bouillon
1 glove garlic, chopped
1/2 small onion, chopped
3 or 4 large carrots, sliced
1 box matzo ball mix (2 packets in box)
1 tbsp fresh dill, chopped (fresh parsley may be substituted)

Saute the onion, garlic, and sliced carrots in oil.
Add chicken broth and all of the chicken.
Cook matzo balls (follow package directions) in water flavored with chicken bouillon.
When ready to serve, add matzo balls and chopped fresh dill to soup.

That's it! It will taste like you have been cooking in the kitchen all day!
